what would happen if i ran 4 speakers off one? just doubling them up?

what you mean like running the left hand side together and the right hand side together?

should work i suppose, don't know how good it would be, probs need a fairly high power one and all the balance to the front (as you'd be doing basically front left and front right from the head unit)

maybe a bit dodgy, but i dunno, i'd deffo either do 1 set or get the 4 channel amp

depends on the amp if the amp will run a 2 ohm load it wont be a prob (asumiming the speakers are 4 ohm)
