My battery on my iPhone is playing up, lasts about 8 hours with minimal use and the speaker is playing up. Speakers always been quiet but recently has been not working at all now and again when I get a text. Battery only started the last couple of weeks.

Went to the apple shop today and the "genius" wandered off into the back withit for 10 minutes and comes back saying its water damage pointing out to me the water marker in the dock connector which was white when I went in is now suddenly pink and they won't do anything other than replace it for £200

What do I do now?

You can always quote the Sales of Goods Act at them - I don't know how long you've had it for but if it became faulty within say a year or two through no fault of your own then you can state that it's unreasonable for them not to fix it for free/offer you a replacement/give you a partial refund.

But as Gary says - just keep complaining, even if it means lodging a formal complaint with their head office or whatever.

Gonna look into where to complain to, it's only 6 months old.
Surely if the speaker was damaged by water it would crackle, it's clear just quiet. Also how does the dock connector make the battery discharge quicker?

I'd just buy some of these and replace the pink ones then take it into a different store.
