Mine is 1 page and my covering letter is 3 pages. CV shouldn't ever be longer than it needs to be

I don't have a covering letter though Mike
The 2nd time I got made redundant they brought in a load of "specialists" to help us find new jobs and I was told a CV should be 2 pages
That's what I've stuck with ever since

CV should never be over 2 pages anyway - even if you're Steven Hawking; you give enough detail to interest a prospective employer but not enough to answer any questions. That way, the interviewer has more to ask you and can gauge your response.
Employers are not interested in exactly what GCSEs you got; I literally just have
GCSE: 11 x Grade A* to B
A/S Level: Physics (B); Mathematics (B)
A Level: Art (C);Business Studies (A); Geography (B) Graphic Design (B);
That's everything from school in 3 lines - don't pad out a CV in the hope it'll look more impressive, I'm only really interested in Uni and above when I read a CV sent in to me and more importantly is experience. Again with experience, keep it short and to the point, detail job role, duration and key responsibilities.
Then a Personal Statement that should be a paragraph at most IMO - I want to eb intrigued enough to invite you for an interview, not bored by waffle!

And do the heading like a proper letter, your address etc top right etc etc etc

Covering letters don't need to be long either; If that came to me, I wouldn't read it. Keep it short and sharp but make sure the layout is perfect.

See I think thats exactly it, I was taught a specific way to do a cv at school, and have followed it ever since.
CV has qualifications, work experience, skill set, personal statement
Covering letter includes in greater depth work experience, skill sets, what you brought to the table in all relevant past jobs.
