this might be a bit of a stupid question BUT..

if i wanted to get bigger brake discs, would that mean i would have to get bigger callipers?

Yes, you would in most cases, or you'd have to change the caliper mounting bracket.

Usually easier just to put a whole new setup, ie Astra 256mm or Vectra 288mm brakes on.
