At the end of the day the oil is in there to dissipate heat, lubricate and 'transport' debris.
Now if it has lost it's colour it simply isn't as effective as it otherwise could be, I am not saying it is useless but it has bits of carbon going around between moving parts - rings, bores, bearings, lifters etc.
When people are building engines even the angle of the cross hatching on the bores plays a role - too shallow and the rings don't bed in, too steep and the oil runs off too quickly so it's not lubricating as well as it otherwise could do.
For the sake of a few quid it really isn't worth not doing it.
Service intervals are a maximum recommended value. Also bear in mind a lot of the OE oils could well be of a better quality than what some people use for home servicing.
