Right, I have a Dell 2005FPW 20" widescreen TFT. 
 
It has DVI, VGA, S-video and Composite inputs. 
 
TBH the picture isn't great, its kinda flared around text and other things such as players in pro evo   
 
I found this:

Which is the 24" version of my monitor, and the picture seems to be crystal clear. 
 
Any idea what he might be doing differently?  Would it be using a different connection or just different settings.

yes you can set the resolution, mine to was undefined round the edges, i went into the settings and realised it was set to 480p for some reason, so i dont know if thats what its defaulted too, i changed it to 720P and it was 100x better

if youve got a tft monitor you may get away with 1080 also

Ah yes I tried this and it didn't display anything   
 
Perhaps I need to use a VGA connection instead of composite?

im not so sure mine is spot on with composite mate, unless it only affects lcd panels

i run mine on a pc monitor bought a cable from game for a few quid, had the same problem still, had to change the res in console settings then was fine
