there not the easiest in the world cos the inlet manifold is so tight. but it can be done cos ive done mine. 
 
1800ed thats cheap for a head gasket it can be up to 600 - 700 on some cars.

my 1.4 sport cost 500 quid, but was quoted at 550, just caught the guy on a good day ;P so yer, 300 quid is horendously cheap, especially if its skimmed !

if it's still flat, then there would be no need.

For the price of a head skim its not worth not doing it! 
 
As for £300 being dear get real.  
You "may" be able to get the bits for £70 and do it yourself, but obviously if someone else does it your going to be paying them.

Obviously you need to get someone to fit the new engine if you go that route, not worth it for something as simple as a gasket change. 
 
The problem with the head skim is that the head needs stripping and rebuilding. 
 
I did a head gasket change on my old 16v Nova for £25 odd, new bolts a head gasket, and a few hours.

I havent worked on the engine specifically, but generally you dont need a headskim unless you can find a fault with the liners or a burr in the face itself and checkin for it is easy enough. Now if the problem with the head is that its warped then thats harder to check for yourself as you need a straight edge and some feeler guages. 
 
You can do the head gasket with the let and exh manifold on, but why bother, for a couple of £ for a gasket you may as well take em off unless you are rushed for time. 
 
The most akward bit would be findin the time to do it imho.

you only really need a headskim if youve got it hot, but as ainsley pointed out for the price of it its not worth not doing it while its off
