also, ive never managed to wipe any of my contacts despite jailbreaking several times and restoring a few times.
The Apps you just re-sync when you plug it back in. the only trouble ive found is by using multiple PCs using Itunes, it can wipe the apps if you sync. You simply need to link the itunes together.
