Depends on what you are uding it for? 
I use 2 monitors for developing and then have the tesing on the other screen. 
If it is for photoshop wouldnt you be better with a bigger screen and higher res?

I think you've answered your own question there Ian. 
 
Depends on the if the lower quality and smaller size of the cheaper units is a problem.  If not then yeah, multiple monitors are the way forward.

Ian you have a very nice multi monitor setup from when you posted pics of your office!! 
I have 1 of the samsung 22" LCD's at home and they are soo crisp, would defo recoment them.

graphics cards with two outputs, you will probably have x 2 DVI outputs or 1 x VGA and 1 x DVI. 
 
Worse case scenario you will have 1 x VGA and you wont be able to do it.

You can either get a graphics car with 2 outputs on it or get two graphics cards. 
If you only have 1 DVI, then you can get a splitter for 2 screens.
