is it possible / ok to wire up a second set of speakers for the rear from the 1 output of headunit?

I wouldnt risk it to be honest, the head unit will see a bigger ohm load than normal, which may damage the head unit if its not designed to handle it.

your speakers will most probably be 4 Ohm and if you put two 4 Ohm speakers on the same connection is makes a 2 Ohm load at the headunit end, to run 2 speakers from the headunit speaker you would need to user 8Ohm speakers as this would create a 4 Ohm load at the headunit, or so I think LoL! my understanding of it anyway
But you wouldnt see any benefit as the wattage output of your headunit probably is to small for your current speakers anyway
