..EML light comes on but goes off at certain points e.g. around 60-70mph on a slight incline, will the fault be registered when i get diag done? or will it show nothing as the light isnt on.

I'm under the impression it stores it and can be read off but need confirmation.

The ECU stores all fault codes. So yea, it will be on there.

Think the only sensor on mine I haven't replaced so far is the EGR. Or is there more lurking somewhere that I have yet to have the pleasure of finding out about

ecu stores all faults, they can be read by using a small piece of wire - diagnose it yourself
