Why do people use performance leads and plugs, what are the technical benefits of these, can anyone go into detail?

you probably wont notice a difference tbh, best off using proper GM parts

unless you have modified your engine to a high level then there is no point, i still use standard plugs on mine and its running 181bhp.... (its a 1.6 16v btw)
