My corsa is on standard springs at the minute and is in desperate need of lowerin. I'm not sure of the exact offset of my wheels but I've been told that it is a bad offset but I shouldnt have any problems if I drop it 40mm. 
 
If I just put a set of 40mm springs on it will I get any catching or would I get away with it. My wheels are 185/55/15.

you should be fine seeing as the tyres are 185/55 
 
i was able to run -40mm on et35 with 195/45/15 tyres, and it only needed the top arch bolts removed 
 
also, take one of your wheels off and check the offset

for 15's anything from et42-49 is acceptable

just had a look at my wheels. they are et37. 
Am I gonna be able to drop it 40mm or is it gonna catch a lot?

Yeah on Et37 you will get away with it, what you may need to do is debolt the arches. 
 
To do that just undo the nuts on the arches, then take the arch off, remove the bolts (grind them down or cut them off) then get some adhiesive and stick them back on, problem solved.
