I have no problem with the banks doing these types of schemes if its going to make them money, as I have no problem with Subway selling meat that's going to make the most profit.
The problem is the very fact that these approaches are the most profitable ways of going about business in the UK

This is not Muslims necessarily demanding this. It is Subway realising in certain areas they will increase sales by switching to Halal.
Similarly to how you see Juice Shops popping up for these people on fad diets. Market trends, supply and demand.
