Because they are usually running a big carb or carbs and a very peaky cam and are built and specced to run best and be most efficient at high RPM. Much like many other tuned engines. The lumpy idle is the compromise.

hemi's, chevys etc are all 2 valves per cylinder, where as ferrari's are 4per cylinder, nowhere near the same CC's as what some of the real v8 motors are, proper v8s are on double pumper carbs, chargers, etc, where the ferrari motors are on FI, easier to get an idle, dont make quite as much power as some of the blown v8s. sure the ferrari motors n the like are beased on same idea as an F1 motor anyway. nice and revving with peak power quite high up the rev range. where the hemi's, chevys etc have the power lower down as cant rev as high/quick!
