I have done a number of fundraising dinner, and am doing a cycle ride in March, but looking for some more ideas.
I been toying with the following
Opening a thrift store (Large Set up costs)
A Rally (similar to the Plymouth Dakar one)
Any more ideas?

I thought about talking with the likes of Knockhill to see if they would let me have the track for a day for free, and set up a charity track day.
Charge £30-40 per car, 20-30 cars and you're looking at £800-900.
Not sure if they would go for it, but i think they would like to be seen helping raise money for a charity.

That's a good idea, and can get sponsor for the event from a local garage or something to cover the cost of knockhill.
