Increase the amount of meals you have in a day. i.e try and eat something between breakfast and lunch, and lunch and dinner. But no takeaway shiz!
You just need to smash the RDA of calories, and if you have a high metabolism like me you will have to smash it hard!

Best way would be to bare the following into account:
your current weight
your body fat %
your goals - gain muscle I presume?
your current diet - how many meals do you have a day? in each meal how much is carbs, protein and fats?
Once you have all that you can go from there, you'll be able to identify what you're lacking in and where you can cut back.
I aim for about 1.7g of protein per pound of B/W, 3-4g carbs per lb of B/W and fats should be about 12-15g per meal (clean fats - mono and polyunsaturated).
You'll also need to be following a good workout regime tailored to your goals of bulking.
edit: I just read you're only 8.5 stone... the above was based on my needs at 90kgs

8.5 stone I am almost double your weight
I would recommend you eat small but regularly through the day, if you're looking to bulk up try "weight gain" products Caution if you don't workout you will become fat
What exercise do you do?

Metabolism isn't how much you burn in a day, but how much each meal you eat.
I met Kerry Kayes (owner of CNP supplements, Ricky Hatton's ex trainer etc) last week and he explained it in laymans terms for people, and this is how he did it:
--------------------------
Your metabolism refers to how much you can metabolise per meal, if you can't metabolise it all it overflows and turns to bodyfat, as your body stores it for a later time. Remember Protein is stored in muscles, you should ALWAYs have protein in every meal, it can't be turned into bodyfat as it goes to the muscles, carbs/fat are the energy source so they turn to fat if it overflows.
Imagine a big jug, and in that jug was all of your days calories in 2500 for the average man, blended up into a baby food type consistency.
Then take 3 cups and place them infront of you, which represent the usual persons eating times of breakfast, lunch, dinner. You'll find out that when you pour a third in each cup, most of it will overflow and that is how your body is with its metabolism. If you take in too much food per meal it overflows and is stored as fat.
But..... now get 3 more cups and have 6 infront of you, and pour even amounts into the 6 cups and you'll fill the cups and empty the jug (he did this infront of us). Thats how your body will work if you eat every 3 hours like you should do. Me for example my day looks like this:
7am: Breakfast (600+ Cal)
10am: Mid Morning Mass Shake (600cal)
1pm: Lunch (600+ Cal)
4pm: Afternoon Meal (600+ Cal, also works as my pre workout)
6pm: Pre-Workout Shake (about 250 cal)
7pm: Train
8pm: Post Workout Shake (whey and simple sugar carb, dont need to count these cals)
8.30/9pm: Dinner (600+ Cal)
11.30pm: Pre-Bed Meal (depends if i'm up late, during week i go to bed about 10pm after my Dinner)
So I take a minimum of 3000 Calories a day, but it usually works out at 3500-4000 a day after adding it all up properly.
You NEED to eat every 3 hours, to keep your metabolism going instead of it starting, then going catabolic (muscle eating) then starting etc, you need it constantly chugging along.
At 8.5 stone that is insane, thats less than my gf, i'm hoping your like a 5 foot dwarf as 8.5stone for anything taller is insanely underweight. My advice would be for you is to eat alot every 3 hours, for the first month don't fuck about calculating stuff up, just make sure you eat high protein, high carb and moderate fat meals every 3 hours. At your weight you could probably not worry about eating 100% clean, as by the sounds of it you could drop weight easily so worry about that once you have some muscle on you.
Tomorrow morning, wake up and weigh yourself and take a pic of yourself. Then don't weigh yourself for another 4 weeks. Fuck the scales, they don't tell you jack your body yoyo's daily. I can be 5lbs lighter in the morning than i am in the evening.
Seriously, just EAT, WEIGHT TRAIN, EAT, SLEEP thats all you need to do. Leave cardio out, hit the weights hard, leave your ego at home and lift what you can with strict form and you could EASILY gain 7lbs in a month (you'd probably gain more like a stone)

Yeah, lets tell an 8.5 stone male that he must eat small. Fuck that 8.5 stone is the weight of a 12 yr old boy. you need to EAT and train. I don't know what your metabolism is like as i don't know your eating patterns, but at your weight i'm guessing its either incredibly fast and you eat too little a meal or its shot to pieces as you don't eat enough now
Gaining/Losing weight is not rocket science.

Can't say without seeing a pic you could be skinny fat, or just skinny or you could be an 11 stone boxer with 5% bodyfat.

eating patterns i have to say are varied at times. (all depends on my frame of mind at times).
most of the time though i eat 3 meals a day and i would say theres alot more in my meals than i see other people eating.
as for matabolism (sp) i think its pretty quick if im honest as i do eat a fair amount imo.

First point of call is to get into the mindset of eating every 3 hours. It really is a must, i don't mean eating 6 roast dinners a day, at first try 500 cals per meal (that really isn't much) and see how you go. You need to give it a good shot for a few weeks to see how your body reacts.
Even if it means halving your normal meal portions, eating half then and then the other half 3 hours later. Just make sure its every 3 hours and a nice balanced meal!

By the sounds of it you don't eat nearly enough. You may think you do but I bet you could eat ALOT more. As Adz said eat every 3 hours to avoid going catabolic. Eat loads of good quality foods such as meat/fish/complex carbs/fats and you will put on weight.
It's so simple yet so many people fall at the first hurdle; a decent diet.

I'd say anything from 11-13 stone was average for an 5'11 bloke. 11 maybe a little thin but not unhealthy like 8.5 stone.
Matt L; Seriously though 8.5 stone is massively underweight. You must look very undernurished at 5'11 and it can't be healthy.

It means your skinny fat then it means that you don't have much muscle mass, and unless you weight train and gain muscle if you lose weight you'll just be a smaller body of what you are now and the same for gaining weight.
Hit the gym, lift heavy weights and eat :-D
