I did this not too long ago and had a great day, car was great and the instructors were spot on. This was a gift to me and i cant recommend it enough. I never felt like they were restricting me too much either. You have to be respectful of their knowledge and vehicle and other rules etc etc.
A clip of my day is linked below, this was halfway around the penultimate lap to the end of my session. Earlier laps had a bit too much traffic.

Do you get the same instructor all day long?

It'd piss me off a lot the fact that he is making you drive it slowly ... like 'change into 5th, change into 6th...' it's like ffs I'm not even in the power band.

Would be nice to think if you do well in the shit cars with the instructor he may actually let you go a bit quicker in the faster cars...

You see this is what I mean, the instructor must quite early realise this guy is not confident in the car and doing stupid things and purposely keep him quite slow for the whole session - like keeping him in 4th through a slow section.

i would be a little worried tho in a car with that much power...
esp on 1st lap.

Same instructor all day, if you prove to them your not an idiot, can drive and are not being a dick head you get to push them further and further!

Mine was letting me abuse the Ferrari not to its full potential but was driven hard!

Nearly spun the ginetta going into a corner to quick and letting off (school boy error) and he just laughed as I shat my pants almost!

A mate of mine done one the other week and was fitted with dual controls and a limiter on the revs to keep the power down, he was HUGELY dissapointed!

im actually selling a red letter day..

test laps in a focus rs and then..

5 laps in a lambo gallardo
5 laps in a aston martin vantage
5 laps in a ferrrari f430
5 laps in a porshe 911 turbo

was a gift but im so busy i dont think il be able to do it so dont want it to go to waste..

cost my mum around £420 as its the best package they do..

Thats cool

That's kinda what I'd hope really, the instructor adjusts to the level / confidence of the driver... therefore not limiting someone who is willing to drive the car harder, but keeping the other people safe and under the 'belief' they're also going quick.

The only day that i've done like this was an Italian Job experience on an air field. There was a ferrari day being held simultaneously, and i was passing 360's in a mini cooper (BMW )

I wasn't sure at the time whether i was particularly quick, if the people in ferraris were particularly slow, or if the instructors were holding them back. what i realised soon after though was that anyone can get into a modern hatch and drive it close to the limit within a couple of laps, but put into an expensive supercar, it's going to take you a while to get used to it and build up the confidence to push it hard. I'd have been the same if it was me in the 360.

In answer to your questions, You start the day by being shown the circuit in a Mazda 3MPS over 3 laps getting quicker each time. Then you got to drive a cayman getting faster each time. At the end of that session you are scored in all the areas eg, understanding the 'racing line' and the ability to respond to instruction, braking, steering, application of throttle changing gear etc etc. The score card gets marked out of ten and comments are added under each section. This is then passed on to the next instructor.
Whilst driving they will allow you to go as quick as they think you are capeable of going. Obvously they will not allow you to bounce the car of the limiter. Due to the nature of the track at thruxton your not able to ring the neck of a F430 in sixth. Coming out of 'church' corner i had the car in 5th gear and was able to use most of the rev range before changing into 6th the car was certainly in the power band doing about140 mph.
Must admit the carbon brakes were out of this world.

Yeah but that guys driving is shocking... the instructor has to grab the wheel to make sure he steers in the right direction about 10 times and keeps shouting at him about stuff.

Watch Steve Smiths video (the original one posted) ... in contrast Steve is so much quicker / smoother / more in control than the other guys vid.
