Was going to do this to my fiesta but traded it in.

However, i'm going to order these black side stripes tomorrow from DMB Graphics but i'm really not sure whether i prefer them with the 'ST' logo on them or without it.

Also ordering black ford badges with silver writing for the centre caps, front badge, rear badge and steering wheel so you can kinda see a black theme going on.

Nah, it looks weird with no writing there, imo it's either none or with the logo, don't fancy the stripes on their own much.

I saw a Fiesta Zetec S with those stripes and "ZS" written in them, is that an optional extra?

ford dealer's can get the stripes made up for you on your request, but it's not a factory optional extra on anything other than ST's.
