To be honest, I've said it before and I'll say it again. Going quick around the nurburg isn't really related to knowing the track / best lines (obviously that helps) but it's how big your balls are 
Basically the person who keeps it flat out and foot on the floor for most of it will be quickest, most people won't - especially places like the foxhole
'fuchsrohre' bottom of page 8 of that guide!
That's a steep downhill section, so steep that even in my car it was v. soon at 135-140 mph heading down there... at that point (and knowing whats coming up) you definately feel like you want to stop accelerating! (picturing in your mind your car losing it at those speeds with the barriers only meters either side and other cars charging down blindly at you)
As they show in that guide, they're in 6th gear charging down there (probably well over 150 mph...)
now you may know the exact line through that section, but i guarentee most of you wouldn't charge down there at the speed they do in the guide

Surely, it would depend on rev limiter, ratios? so they cannot comment on when to change gear because every car is different.
Same goes with braking zones, surely this depends how big your brakes are and how much weight you have behind you?
entry and exit speeds? again, surely it depends on how well your car handles, so if they say enter the corner at 70mph, surely a little Corsa or somthing will be pushing it? hence they might lose control and crash...

It says on one of the 1st pages that all of your points are based on a certain car and will be different for all cars.
