i'd say evenings, from like 5-8pm as thats going to be peak time surely?

First i thought lunchtime.. everyone surfs ebay then... then I thought 8pm might be best because everyone is home by then and ready for a biddding war

i would also say dont make it end on a friday or saturday night, cos loads of people are out geting pished

I always have my auction ending on a saturday evening at about 9ish. Everyone's had a drink and is at home and gets a bit carried away

I'd agree with the evening thing. Even if they aren't on the computer in the evenings normally, they will be that night if really interested in what ever you're selling 
Do 'Buy It Now' as well, costs a tiny bit more, but may get it sold, especially coming up to Christmas.

In my experience buying Sunday afternoon/evening is the lowest price in the whole week.
Saturday is not much better
I always aim to end mine either mid morning or early evening.

Evenings, but i just usually list anytime in the evening and not too fussed what day it finishes...
Always get top dollar, but 90% of the time i have a buy it now too and most of the time it sells with this so i get what i want anyway.
