I am viewing a car today but is currently not taxed, obviously because im not insured on it I cant tax it, if I were to take out the insurance policy I have to wait for the document to come through to take it to the post office, if I do it online it says the database of insurance takes a little while to get updated. What other options do I have?

Get a cover note thingy from the insurance company.
Or, go to a high street broker. Take out the insurance, pay for it, get a cover note there and then, tax the car. Then, when home, cancel the insurance within the 14 day period and take it out with the company you intend to.
Apart from that, there is no other real way, other than what has been mentioned.

The car was sorn, I got insurance sorted and they emailed me the cover note, I printed it off and the post office accepted it Cheers guys.
