There are no direct to head applications available on my engine. Can you buy the single bodies and fit them direct to the head obscuring the need for a manifold?

Only if your head has a bolt pattern the same as one of the flanges offered.
For example, Jenvey do DCOE, IDF, IDA and DNCF flanges, so your head would need the bolts in the right place for one of these, if you want to fit Jenveys.

Im trying to work out why people in the past used twin bodies on the 8v despite the fact the port spacing its out and the tracts have to come back on themselves. Surely using single bodies and spacing the bodies evenly, lessening the bend to the mildest degree possible will increase the flow rate and be superior?

individual taper throttle bodies cost more than parallels, and the small gain to be had sometimes dont seem worth it

a properly designed inlet manifold is a benefit when fitting tb's. sometimes DTH bodies sound good but dont give as good results as ones that are used with the correct manifold.
