I need to tax my car but i cant find my Insurance documents anywhere i can find my MOT , is it possible for me to tax my car without producing my insurance documents?

That is your real only option. Unless you ring up your insurance company for a cover not - they normally send it 1st class.
If you do it online, and the tax disc hasn't arrived, you can still drive. As soon as it is authorised online you should be fine i.e. if police pull you over, they can check and see that you have paid.

I think they give you a certain amount of days to display it.. I got pulled up on a routine check (as so did other cars) and they done their usual checks and my car wasnt taxed or it oneday left i cant remember (i stupidly put a note on the tax disc saying it was in the post haha) anyways the copper did a check and found out the car wasnt registered and i said that my mum had sent the forms off and also paid for the tax disc but cant have the tax disc untill the car was registered in someone's name. They just said i had 14days so i presume thats how long i had to display the tasc disc.. they also looked at that note and laughed and showed it to their other copper buddies lol.. bet they thought "what a idiot" lol

Cool makes me happier i will just do it online, by time tax is due again i will have new insurance for which i will keep the cover note

doent matter weather you have done it online or not 'failure to display' is an offence
