I don't need to lose weight, I want to start building my fitness and tone levels up again.
I'm back at the gym and have been there for a few weeks now but want to change my diet to suit my 4/5 times a week in the gym.
Anyone a nutritionist or know what I should be looking to do?

simple example..
less carb intake, more protein intake
dont cut carbs out totally as you will still need some. but make them good carbs, brown pasta/rice baked potatoe not chips etc etc..
get some more chicken, tuna, turkey (lean meats) into your diet 
drink more water. probably around 2-3l a day

I'm doing the water - 2 litres per day plus an extra litre for every hour of exercise!
I've read about eating "good" carbs in the 2hours immediately after weight training as this is when muscles absorb the most nutrients? is this right?

he isnt bulking so wont want too much protein as that will just add more weight/mass.

kinda yeah..
if you get home from gym and have salmon fillet with baked potatoe and other veg then thats perfect 
good all round meal.
really if your doing enough excercise each time down the gym, mixing weights with cardio, then depending on what shape body you want, you can eat almost anything. (not junk food tho)
try and get 4-5 small meals per day. each with some protein in there. this will speed your metabolism up, thus burning more calories. 
dont skip breakfast either
