When I swapped the engine in my corsa to a 1.6 , I told my insurance company this and they told me that they would now insure the car as a GSi (1.6).

But had I gone and changed this on the v5 and not told the insurance company , would it not just come up on their system as a GSi ?

no, it would come up on the DVLA computer as a 1198cc car with 1598cc engine with a different engine number.
