How exactly is the car secured whilst being tested so that it doesnt fly off the rollers??

they use straps from the tow hooks to the floor usually

how do they get the rollers to go the same speed? or does the car turn the rollers?

yes, the drivng wheels sit in the rollers, the car is then put into gear and accelerated, usually in4th gear, to the limiter, then its left to decelerate down to 0mph again, then a computer work out the bhp at the fly for you and prints off a nice wiggley line.
