After trying to accelerate as normal with my dad in the car i've realised that a passengewr seriously affects the performance of a 1.2 16v.

Appart from the dashboard or the spare tyre, what can i do to lighten my car?

I agree to a degree with Neshol. Just go out and lift that bonnet. I weighs heaps. I don't think carbon fibre would be sensible though...too expensive to do properly. Fibre glass should do it.
Then let your insurance company know!

Just loose everything that isn't needed.

The sound deadening is quite heavy, put a blow torch on it and it just peals off!

Small lightweight wheels.
Perspex/polycarb windows.

Carbon fibre bonnets are a very expensive way to start!

Agreed you aren't really going to get a massive top speed or acceleration out of a 1.2
