I have

Alpine M500 - 60 fuse on it
Alpine T320 - 30 fuse on it

I need to get new power cables and earthing. What sort of fuse holder do i need and what fuse rating do i need?

Get an ANL Fuse and use 4 gauge cable from the battery to a cap or splitter, then run 8 gauge from there to each amp.

A 100 Amp ANL fuse shud do the job.
