So when i go to the Post Office at the end of the month am I going to have any hassle Taxing the car properly?

Will I be chased for the back tax as it had 8months tax left on it when I got it and obviously this cost £0

Go to DVLA office and get it changed!

My dad had a car that was registered as diabled on V5 for ages. He just left it as that but still paid the TAX for the price that it would be if he wasn't disabled.

Tried doing it online?

my gsi was like this. Had to go to dvla office in person and get it swapped over
