Difference is fuel metering. Carb works on venturi principle to add correct amount of fuel, whereas with throttle bodies they use EFI to meter the air mass flowing in to add the correct amount of fuel.

TBs, bit more power due to greater accuracy in tuning, carbs are old school cool, noisy, powerful and easier on the wallet.
I would rather lose by a mile because i built my own car, than win by an inch because someone else built it for me.

It's worth mentioning what it costs you in original outlay for the TB's, you'll probably make back in Fuel efficiency, not having to have the carbs re-tuned every so often, and don't have as many issues with emmissions come MOT time.

not strictly true but there are a few carburettors out there that are run through the ECU which pulses a signal to the solenoid valve in the carb.
