would it be entirely possible to shot-blast the calipers and powder coat them???

Get it done

The guy who did the springs can do it with rubbers intact as he uses low temp powder... So you can get them done with the rubbers in place so you don't mess the calipers up. Then get a caliper seal kit and re-build the calipers so they are all good
