Head gasket doesn't need running in because you don't re-torque the head bolts any more as you angle tighten them.

thermostat doesn't really need running in, you just need to run the car and make sure it opens at the right temperature.

maybe the prick just didn't want me to find out he didn't fix it properly as now it keeps stalling all the time without any warning and there are no other problems at all 
some are saying icv and that it messes your speedo up but my speedo is fine.
it's a 1.2 16v engine so don't know if the clocks are any different ( i don't know much about the mechanics etc.

idle control valve just regulates the air going into the throttle body to keep it idling at the most efficient level.
When this fails the car will stall as the air allowed in will be all wrong
