hey.
My whole ICE was currently stolen from my car which had 1X JBL amp 1X alpine amp 2X 12" infinity subs and 2X infinity 6*9s
I know there is no chance of the police finding them so i need to buy it all over again.
what my question is, is...
What amp would be best for 2X 12" infinity subs?

Well what model is the infinity sub? Rms power?

the 2 subwoofers i am using are 2 X Infinity: Reference 1250W - 12" subwoofer
frequency response: 25-400 Hz
power range: 60-300 watts RMS (1,000 watts max power)
sensitivity: 93 dB
top-mount depth: 5"
Impedance: 4 Ohms

From what i understand about amps
The infinity one will run both subs, each sub having 278watts each.
I wouldnt know how you would run the jbl one as its a mono amp but can be stable at 2ohm. But both your subs are run at 4ohm.
