Its not exactly difficult to drive in a straight line though is it. If it was round some corners I would agree.

What does 0-60 have to do with pulling away from somebody at 120?

Pug is definitely lighter but it would still need some extensive engine mods to leave a 2.0 for dead at 120mph.

Not much, but I think it's safe to say the 1.6 lump starts running out of puff at these speeds...
Car couldn't be standard. N2O could be possible, as you get a greenish flame with nitrogen present (and low concentrations of oxygen which was burnt in the cylinder). He probably just had 250bhp for the few seconds he was flooring it...
N2O itself doesn't burn -- the fact you get a performance boost is due to the increased concentration of oxygen, and the temperature reduction in the cylinder meaning denser air

no way that's a standard 1.6
the 106 quiksilver, 75bhp, 150kg lighter than my 88bhp sport takes longer to 60 and slower on higher speeds.
and a 120bhp pug that does 0-60 in 7.2s is obviously gonna have fairly short gears, so with nitrous would go well quick accelerating all the way but top end wouldn't be very high, but as said, it would only leave you standing if it was slapping the NOS in quick.
