If your Blue steak has loads of blood coming out of it - it's overcooked. I eat blue steaks and the blood "should" stay congealed as it isn't heated for long enough to turn into liquid!
One of my favourite dishes is a good Fillet Carpaccio, which is very thinly sliced (on a mandolin) raw beef, normally served on rocket with a parmasan dressing 
How anyone can compare Nigella Lawson's home "cooking" to Heston Blumenthal's "Molecular Gastronomy" is beyond me! Nigella herself classes herself as "a cook not a chef".
I've still to go to the Old Fat Duck, which is Heston Blumenthal's restaurant but I've so far eaten at Jamie Oliver's "Fiteen" in London (twice), Amsterdam (twice) and was at the Cornawall one on the opening night. I've also eaten at J.O.'s mum and dads place, "the Cricketers. Last year we went to Tower 24, which is Gary Rhodes London Restaurant in Tower 42 in central London, Anthony Worral Thompson's "Notting Grill and Gordon Ramsey's at Claridges. I have a love of food and don't mind paying if it's good!
