£2k woudl get you a 33bhp restricted SV650S. IMO, a superb bike to learn on. 70bhp, bagfull of low down torque, thumpy sweet sounding twin engine.
Baby sports bike, I actually miss riding mine still its so much fun. Still got it, still considering turing it into a track bike. Its not "straightline" fast (yaaawwwnnnns), but i'll do 130+mph, and on my standard one, still done a 1/4 mile in 12.4 @ 107mph 
Sersiously, consider the SV, it really is a great little bike, cheap to run, cheap to maintain, and BAGS of modifications to suit it to you.

You won't be over taken on a retricted bike. 
My advice is once you've passed your test is, if you have friends on bikes and you go out together, don't worry about them leaving you in the distance because they're faster riders. Take it to YOUR limits (but not beyond), and enjoy your self!

And if you buy a new one, they are doing 0% finance, 1 free track day etc as well.
Really, im biased becuase I had one, but when u've known people who've downsized to an SV because its so much fun, well, they can't ALL be wrong.
Theres other alternatives, Bandits (got one now), and the little 400's as well, but the 400's are getting quite old and tired. SV's are 1999 to today, and you can pickup a curvey for well under £2k. Gonna sell mine for about £1200 i reckon, if i do sell it.
Don't forget to allow for crash helmet, gloves, leathers/waterproofs etc. Thats another £500-£1000+ depending how much kit and how much you value your skin.

Yeah £2k - £2.5k would be for the bike and everything else that goes with it. Mate of mine blagged his helmet when he bought his bike, worth a try.

What helmet was it Nath? I generally go for a branded one. Not because its a big named brand, but because they are generally better quality. At the moment i've got an AGV Airtech. I highly reccomend AGV, Arai, Shoei and Suomi
