I used to ride to work every day on my derestricted 50cc doing 50-60 quite happily, going up hills though were pretty terrifying, i cant imagine a 125 fairing that much better uphill either, but then i've never been on one

i had a tuono 125 was brilliant.
4 pot on the front standard, discs front and back, decent size tyres, feels like a big bike, handles really well. and get kudos from proper bikers not like other gash 125's lol

Look at the Honda XL Varadero.
I know someone with one - he says it'll do 70mph no problem (although takes a while) and is extremely cheap on insurance compared to something like the RS125.

60 miles per day on a 125....
Been there, good luck. U'll need it.
You want a restricted access, limited bike. 125cc, on 60 miles per day, will NOT be good enough, take it from experience.
A 200cc bike is not good enough.
4 stroke 125's are much better for what YOU need it for, but slow, 70mph odd. Good mpg, but as much fun as a sloppy wet fart.
It needs to do 80, I can promise you that, but a RELAXED 80mph, not 80mph and sitting at the top of the rev range nearly having its nuts revved off.

VXR speaks the truth here, there is no way I would use my RS as a daily commuter for that distance, as a 20km there and back ride through town to Tesco for me at the moment its perfect, if a little loud 
I tried to do a trip to my parents 50 miles away and sitting at 60/70mph isnt nice when its doing about 7.5k, as its very loud and quite rattly and uncomfortable

If you want a 125 to commute 60 miles dont get a 2 stroke, it will be dead in no time that is not what they are designed for..
Also take into consideration if any parts of the dual carrige way you are using are motorway classified you'll be breaking the law.
