Heston is a genius, wish more chefs were into molecular gastronomy would see some create stuff on menus.

It's basically goose (or duck) liver, they force feed them special feed (corn based I think) to make it bigger and sell the liver for mega bucks as it;s classed as a delicacy
Sorry for questioning your 'fugu'

Theres a place in new york that does expensive burgers.
Sirloin steak
Black truffle

£100 a burger apparantly...
With a free small side tray of chips - chips looks loads more appealing

Yeah, also any kind of offle WRONG
Family friends used to be into cows hearts and pigs trotters etc, anything of that nature makes me feel ill. I used to only feel comfortable with processed meat as a kid but realise that's not quite right, however anythign apart from flesh is just rank.

I totally agree, it's wrong to eat stuff like that, I mean liver... doesn't that filter toxins out of blood??
I am fussy with my meat too, I am organic for meat and dairy

I thought you were an unusually cultured person from Clitheroe, but your hatred of smoked salmon has ruined that image.
