Cut a tiny piece of selotape up and stick it over the microphone on his phone.

My mate used to shrink wrap his colleagues keyboard phone wallett keys, change phone and anything else he was sily enough to leave on his desk

Best thing to do.. if he is away on a meeting for 30 mins etc etc. Hide EVERYTHING off his desk, Computer included, and if time, hide the desk too

It was at Virgin megastore, so they used to have a machine to shrink wrap cds/dvds.
At the end of every "roll" of shrinkwrap there is a neat little ball of plastic that is about the same size as a football

My boss went on holiday a month or so ago for about two weeks. The first day he was away we went and bought some Cress 
The result after just one week....

Was alot longer and thicker after 2 weeks. Took a lot of looking after but we had a rotor for who had to water the cress each day, but in the end the look on my boss's face was worth it

Yeah we hid his real keyboard underneath some of his post that had built up over the 2 weeks.
He's the sort of guy who blows hot and cold, luckily he was happy after his break to Austraila and he found it funny.
Yeah all the function keys got pushed up in the end and several overs

All of the desks at work have a metal bar running underneath at the front. All chairs have arm rests and "piston lifts" on them. Put the chair as low as it'll go, push it under their desk, and press the lever so it wedges itself under their desk, and can't be pulled out cause of the bar .
Another simple one is to simply cable tie the lever up. Sit on it, it falls, get off and it rises again. Quite funny the first time they sit on it and don't expect it 
With the swapping keys round, just do a select few, such as the "a" and"s" keys, and "n" and "m" keys . Drove me crazy cause i thought i was going dyslexic

When i started my job..
I had a spanish keyboard for a month..
I didnt acutally notice due to being able to touch type and someone coming over saying;
Oh you got the spanish keyboard still huh!?

hardly makes it difficult to use though does it, happens with me all the time in england when the regional settings are set wrong
you dont need to be able to touch type to use it
