Bumped a kerb in the meg, so needed a new track rod and track rod end. Tracking is way out now so getting it done Monday. One of the rear Tyres only has 2mm left so few hundred miles left on it. Is it best to change this first or do the rear Tyres not affect the tracking?

Tyres never affect setting the tracking. Just make sure tyres are same both sides.

When iwent to get my tracking done they told me they wouldnt do it as there was un even wear on my two front tyres. I had also hit a kurb and had to have a new track rod end. Told them thats why there was un even wear because i needed my tracking doing !!!

That's ridiculous companys advertise that bad tracking causes uneven wear, but then they won't rectify the problem for the customer. Uneven wear makes no difference, as long as the tyres are the same size there's no reason for them not to do it.
