I know there is a Mini and a Saxo VTS with VTEC engines in them but has there ever been one in a corsa??

doubt it....
vtec engine wont fit in a nova, as box hit's wheel's, and corsa's only a bit wider so doubt it will fit

I looked into it a little while ago. There is a hell of a lot of work involved as most of the parts are on opposite sides to each other.
To answer your question... No, not to my knowledge.

surely if it can be put in a mini it must fit a corsa?

anything is posible but there isnt much point when the vauxhal engines are cheaper/easier to fit

mini is much easier, you can cut the front of, and every thing is mounted of a subframe
