I personally don't think it's actually the torison bar that makes it handle well, I prefere individual springs at each wheel, hence my corsa felt more stable... however it's possible that this setup gives a stiffer natural rear end that a corsa standard...
However the 106 Gti also has a STANDARD 24mm rear anti roll bar... meaning it is more oversteery / turns in easily and doesn't understeer as much.
What rear anti roll bar does a corsa have standard?
The anti roll bars on a FWD car make a big difference to handling. A FWD wants to be stiffer on the rear, than the front, so the front can grip and hold its line and the rear slides and follows the line.
If you have a soft rear end, (and a stiffer front end) it'll grip more on the rear, meaning the car will try to go straight on and understeer, leaving you in the hedge.
Obviously weight makes a big difference and body roll etc, but I think the anti roll bar could be a big difference between the handling setup of a corsa and a 106 gti, and that's also why a standard 1.1 106 doesn't handle anywhere near as well as a 106 gti does (because it lacks the rear stiff rear anti roll bar, as well as the springs and shocks of the gti).
Adi_Sri off here upgraded his Anti roll bars on his Corsa Sri and said it completely transformed the car.

The only problem with leaving the front loose is that it'll get snappier.
