How easy is it to change a car from Automatic to Manual?
Looking at doing a project which would include an engine change but the car is an auto at the min and would be looking to change.

honestly -
Its best to just buy a manual if you want a manual
You obv need the gearbox and clutch (not sure on flywheel setups etc)
New ECU prob
Its alll dependant on the car... some manufacturers will have more differences than the other.

Totally depends on the car.
If it's an old Escort/Sierra, it'll be easy, just unbolty the autobox and bolt the manual in, if it's a new Lexus, it won't as you'll need a whole new wiring loom and ECUs.

a mate of mine has convertedan Auto to manual...said it pulls better aswel

It's an L Reg Cav
Would be totally stripping the car back to bare shell and building up from there. Looking at a V6 engine going in it etc
