The last three days before the beginning of lent is shrovetide. .

Quin something sunday- 50th day before easter
Cant member monday
and Shrove tuesday- Lent is abstinence so the day before was the day to indulge and to use up foods that arent allowed in lent. Pancakes because they use fat, butter and eggs which are forbidden during lent.
