Been to trafford centre a few times, not really bothered about it, prefer to go into centres and find more individual shops.

stick round deansgate (not locks) for some decent bars that wont be full of chavs and students...Living Room, Label, Prohibition, Revolution, etc. and also some good restaurants up around there.

Deansgate locks is OK for some busy bars, it is always packed and full of chavs though IMO.

Printworks isnt too bad, TigerTiger and some other good bars and restaurants. The cinema is up round there too so always some young chavvy kids knocking about.
