Theres a J plate 1.8 8v GTi in black for sale local with a knackered engine.....136k.
Its got uprated suspension & a few cosmetic changes (16v rear lights, debaged grill etc) otherwise standard, its also a power steering & electric windows / sunroof model.
£500 ono....this is the proposed base car

i reckon you should bang an early audi 20v non turbo engine in it, as it's the same block (according to PPC)

If I had a corrado which i really would love, it would have a 1.8t lump in it.
In PVW mag they did a drag shootout and the 1.8T scirroco and Corrado were the 2nd and 3rd quickest on the 0-60 and 1/4 mile run...only beaten by a mk1 Golf GTi with a 1.8t. The 2.9 mk2 golf was left for dead in the rankings will see if i can dig out the relevant issue out.

I'd go for 1.8T. Seen a conversion guide in a magazine and its been done enough times now so it'll be not too bad to do.

the VR6 isn't as get up and go as the turbo/supercharged lumps. Takes a bit longer to get wound up, obviously.
1.8t would make the most sense
