How about the Fiesta RS Turbo and making it in to an animal with poly carb windows etc? 
Either that or the Escort version!

fiesta rs turbo gets my vote rob.
cheap, easy to work on, simple and bombproof. 180+ bhp isnt difficult to achieve either

i picked the corrado because i wanted something a bit more grown up and less boyracer/chavvy type image.
My thoughts
S2 Escort RS Turbo = Personnally i wouldn't have, too many shite ones around my area, not that cool, A mint S1 tho 
Fiesta RS Turbo = Boyracer
Starlet Turbo = Quite Cool, still a bit small
Pulsar GTi-R = dunno too much about em, hear they break down alot, not for me
Corrado VR6 = uber 
Corrado G60 = uber need alot of maintenance
the way i looked at the VR6 tho, was under £4k were pretty shabby/be weary of, Can get a nice storm for £5-7k, I just looked for a normal one with leather, and paid £4k, was probably worth more but he wasn't selling it (i just asked)

i can probably spend 4.2k on a VR6, 4k on a G60, but it'll break.

get a nice standard VR6 thats been well looked after, I wouldn't worry too much about the old timing chain thing people go on about (needing it done at 100k etc)
you have to drive one 
Mate has a golf Vr6 and its a totally different car

hopefully i'll bag that blue one i showed you. as long as its as good as it sounds, it'll be spot on, seeing as its had all the major mechanical bits sorted recently

No competition, buy a Pulsar you great Nelly.
But get a Sunny, then it will be a UK car despite having the gayest name since Cherry. 
Probably out of your budget then though, as I think the Sunny GTI-Rs are a bit rare by comparrison and worth much more.
Would be cheaper to insure though, and easier to get bits for.

That blue VR6 with the TT alloys I posted a few weeks ago is dropped down to 2700
