how do i go about informing the dvla and such if i call up a scrap yard to come take a car away to scrap it ?

There is a part on the V5 to say it has been scrapped.

and then do i get anything from the company who take the car to be scrapped ?
because they could just repair it and sell it or do something dodgy ? do i not need to tell the DVLA who scrapped it ? cheers

All the details are on the V5. Think you have to tell them who you scraped it with and once it has been registered as scrapped the DVLA will confirm by sending you a letter.
