I am insured with Liverpool Vic and the policy ends 31st of april, is it possible that insurance companies can extend this policy another 2 months to the end of June for £xxx amount, that way i will be 20 when i renew my insurance rather than being 19 (saving the pennies)
Then i will start new insurance policies just after my birthday each year

some companys do 6 month policys, i had one for that exact reason.

Get a monthly insurance, and cancel it in 2 months

no you can get monthly policys , can even get day ones as some times you have to do when hiring a van ect
